Homemade Ice Cream Sandwiches

2 Boxes of Reduced Fat Graham Crackers
Big Whopping amount of whipped cream
Tip: you will need a couple of cookie sheets and some room in your freezer.
Take each Graham Cracker and split them in half, and also split a few but not all in to quarters (The Quarter ones will make great finger ice cream sandwiches for toddlers). Then scoop a couple of spoonfuls of whipped cream onto graham crackers, then place graham cracker of similar size on top, creating a sandwich then place on cookie sheet then repeat until cookie sheet is full. Then place cookie sheet in freezer for 4hours or until stiff (it may not be completely stiff, a little soft, as long as its not super squishy your good to eat it, or store it). Then place Sandwiches into plastic containers, and back into the freezer, or serve right away.
Tip: If you end up with 2 cookie sheets worth like I did. I would suggest freezing the first sheet for 2 hours, then placing the second sheet on top of the first cookie sheet in the freezer.

I like to make these with the chocolate grahm crackers, and the cool whip free. Its a low point weight watchers treat, I either heard it from hungrygirl.com or Rosie O'donnell years ago... can't remember which. YUM!
ReplyDeleteI heard of the idea on Dr. oz . they had no recipe to I had to make one up and decided to do it from scratch because my heavy cream was expiring. I'm so glad it worked out. it s diabetic approved to way less sugar than my sister going to be she loves it. I definitely want to try chocolate graham crackers that sounds yummy too. nice idea vanessa.
